Whip up a quick and simple pie with a press-in crust and crumb topping.
Ingredients:
  • 2/3 cup quick-cooking oats
  • 1/2 cup Original Bisquick™ mix
  • 1/3 cup packed brown sugar
  • 1/4 cup firm butter or margarine
  • 1 cup Original Bisquick™ mix
  • 1/4 cup butter or margarine, softened
  • 2 tablespoons boiling water
  • 1/2 cup pineapple juice
  • 1/2 cup raisins
  • 1 tablespoon cornstarch
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 4 cups sliced peeled pears (about 3 medium)
Instructions:
  • Preheat the oven to 375°F. Combine oats, 1/2 cup Bisquick mix, and brown sugar in a small bowl. Use a fork or pastry blender to cut in 1/4 cup firm butter until crumbly. Set aside.
  • Combine 1 cup Bisquick mix and 1/4 cup softened butter in a medium bowl. Pour boiling water over the mixture and stir vigorously until a soft dough forms. Press dough firmly into an ungreased 9-inch glass pie plate, using Bisquick-dusted fingers to bring the dough onto the rim of the plate. Optional: flute the edge of the dough.
  • Combine pineapple juice, raisins, cornstarch, nutmeg, and ginger in a 2-quart saucepan. Cook over medium heat, stirring constantly, until thickened and boiling. Boil and stir for 1 minute, then remove from heat. Gently fold in pears. Transfer mixture to a pie plate and sprinkle with topping.
  • Bake until the crust and topping achieve a lovely light golden brown color, about 25 to 30 minutes.
