Pearl couscous carbonara risotto recipe

30-Minute Couscous Carbonara Risotto: Bacon-infused pearl couscous with thyme, topped with crispy bacon and parmesan. The ultimate comforting meal to end your day.
Ingredients:
  • 18.20 gm olive oil
  • 4 bacon rashers
  • 1 brown onion, coarsely chopped
  • 340g (2 cups) pearl couscous
  • 1L (4 cups) salt-reduced chicken stock
  • 4 fresh thyme sprigs
  • 60g (3⁄4 cup) finely grated parmesan
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Coarsely chop 3 bacon rashers and add to the pan with onion. Cook and stir for 5 minutes until softened. Then, add garlic and cook for 30 seconds until aromatic.
  • Add the couscous to the pan and sauté until lightly toasted. Pour in the stock and sprinkle with thyme. Cover the pan and bring it to a boil. Lower the heat to medium-low and cook covered, stirring occasionally, for 15 minutes until the liquid is absorbed.
  • While you slice the remaining bacon into small strips, preheat a frying pan over medium-high heat. Add the bacon slices and cook until they are golden and crispy, which should take about 4-5 minutes.
  • Stir in 40g (1⁄2 cup) of parmesan into the couscous mixture until it is thoroughly combined. Portion the carbonara risotto into serving bowls, then sprinkle crispy bacon strips and the rest of the parmesan on top. Season and enjoy your delicious meal.
