Peas with baby onions & chervil

Ingredients:
  • 150g jar baby cocktail onions
  • 50g unsalted butter
  • 20.00 ml plain flour
  • 125ml chicken stock
  • 5.00 gm caster sugar
  • 500g fresh peas or frozen peas
  • 20.00 ml chopped chervil
Instructions:
  • - Drain onions, rinse under cold water, and gently pat dry. - Heat butter over medium heat, add onions, and sauté for 1 minute. - Sprinkle flour over the onions and cook for another minute without browning. - Pour in the stock, add sugar and peas, and cook for 2-3 minutes until thickened, stirring constantly. - Just before serving, mix in the chervil. Serve alongside the salmon dish from the related recipe.
