Transformed classic pecan pie into crowd-friendly slice.
Ingredients:
  • 168.75 gm maple syrup
  • 59.40 gm brown sugar, firmly packed
  • 50g butter, melted
  • 40.00 ml plain flour
  • 625.00 ml pecans
  • 125g butter, softened
  • 45.00 gm brown sugar, firmly packed
  • 250.00 ml plain flour
  • 37.50 gm self-raising flour
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, ensuring the paper extends 5cm above the edges of the pan.
  • Prepare Pastry: Cream butter, sugar, and vanilla in a large bowl using an electric mixer until light and fluffy. Mix in flours until combined. Press pastry onto the base of the prepared pan using floured hands. Bake until golden, about 10 minutes. Allow the pan to cool on a wire rack for 10 minutes, then reduce the oven temperature to 180C/160C fan-forced.
  • Combine eggs, syrup, sugar, butter, and flour in a large bowl, whisk until blended. Spread mixture over pastry base, then neatly place pecans in a single layer on top.
  • Bake at 350°F for 25 minutes until beautifully golden and fully set. Let it cool in the pan until reaching room temperature. Cut into 24 irresistible pieces and serve.
