Delicious pecan shortbread cookies, perfect for gifting or holiday parties.
Ingredients:
  • 1 cup unsalted butter, softened
  • 1 cup vegetable oil
  • 1 cup sifted confectioners' sugar
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 325°F (165°C).
  • Mix together butter, oil, white sugar, and confectioners' sugar in a large bowl with an electric mixer until smooth. Add eggs one at a time, then mix in vanilla extract.
  • In a separate bowl, mix flour, baking soda, cream of tartar, and salt. Gradually add this mixture to the butter mixture, then fold in the pecans.
  • Shape the dough into 1-inch balls and arrange on ungreased cookie sheets, spacing them 2 inches apart.
  • Bake until golden edges form, about 12 to 14 minutes in the preheated oven.
  • Transfer the cookies from the baking sheets to cool on wire racks until completely cooled, about 20 to 30 minutes.
