Ingredients:
  • 1/3 cup finely chopped pecans
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon vanilla
Instructions:
  • Toast pecans in a dry heavy skillet over medium heat for 5 to 7 minutes, stirring frequently until they start to brown, then stir constantly until light brown. Remove from heat and let cool.
  • In a large bowl, use an electric mixer to cream together fluffy butter and sugar. Slowly incorporate the flour until just blended. Fold in toasted pecans and vanilla for a nutty aroma.
  • Split the dough into two halves and form each half into two logs that are 1 1/4-inch thick and about 12 inches long. Wrap the logs in cooking parchment paper and chill in the refrigerator for 1 hour or until firm.
  • Preheat oven to 325°F and prepare cookie sheets with parchment paper. Slice the dough into 1/4-inch slices and place them 1/2 inch apart on the cookie sheets.
  • Bake until light golden brown for 18 to 20 minutes. Let cool for 5 minutes, then transfer to cooling racks.
