Pecan Turtles® Pie Bars

Delicious twist on pecan pie inspired by Turtles® candies.
Ingredients:
  • cooking spray
  • 0.66666668653488 cup white sugar
  • 0.5 cup butter, softened
  • 2 teaspoons vanilla extract, divided
  • 1 pinch salt
  • 1.5 cups all-purpose flour
  • 0.66666668653488 cup packed brown sugar
  • 0.5 cup light corn syrup
  • 3 eggs
  • 0.25 teaspoon salt
  • 1 cup chopped pecans
  • 0.5 cup semisweet chocolate chips, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish with cooking spray.
  • Cream together white sugar, butter, 1 teaspoon vanilla extract, and a pinch of salt until smooth. Mix in flour until dough forms, then press into the prepared baking dish.
  • Bake in the preheated oven for 15 to 17 minutes until the edges are lightly browned. Allow the crust to cool completely.
  • Combine brown sugar, corn syrup, eggs, the rest of the vanilla extract, and 1/4 teaspoon salt in a bowl, whisk until smooth. Add pecans and mix well. Pour mixture over the cooled crust.
  • Bake until golden brown and filling is set, for about 25 to 30 minutes. Let cool to room temperature then cut into 36 bars. Chill in the refrigerator until cold, approximately 1 hour.
  • In a microwave-safe glass or ceramic bowl, melt the chocolate chips in 30-second intervals, stirring after each until fully melted (1 to 3 minutes total depending on your microwave). Drizzle the melted chocolate over the cold bars placed on waxed paper.
