Indulgent cheesecake with caramel, pecans, and chocolate swirls. A heavenly treat!
Ingredients:
  • 2 cups vanilla wafer crumbs
  • 6 tablespoons unsalted butter
  • 14 ounces individually wrapped caramels, unwrapped
  • 1 (5 ounce) can evaporated milk
  • 1 cup chopped pecans
  • 3 (8 ounce) packages cream cheese
  • 0.5 cup white sugar
  • 1.5 teaspoons vanilla extract
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 9-inch springform pan.
  • Preheat oven to 350°F (175°C) and toast pecans for 6 minutes. Set aside. Keep oven on. Melt unsalted butter in a small saucepan.
  • Mix the vanilla wafer crumbs with melted butter, then press into the bottom of the springform pan. Bake on a cookie sheet at 350°F (175°C) for 10 minutes. Cool before proceeding.
  • Melt the caramels with evaporated milk in a double boiler until smooth. Pour over the cooled crust and sprinkle with nuts.
  • Combine cheese, sugar, and vanilla in a bowl, beat until smooth, scraping down the bowl. Add eggs one at a time, beating until smooth. Melt chocolate chips in a double boiler, then fold into the cheese mixture. Pour over the caramel layer.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes or until just set. Refrigerate overnight before serving for best results.
