Decadent turtle-inspired cheesecake with whipped cream, nuts, and cherries.
Ingredients:
  • 2 cups vanilla wafer crumbs
  • 2 tablespoons unsalted butter, melted
  • 1 (14 ounce) package individually wrapped caramels
  • 1 (5 ounce) can evaporated milk
  • 1 cup chopped pecans
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C). Combine cookie crumbs and melted butter in a large bowl, then firmly press the mixture into the bottom of a 9-inch springform pan.
  • Melt caramels with evaporated milk in a heavy saucepan over low heat, stirring until smooth. Pour the velvety caramel sauce into the crust and sprinkle with pecans for a decadent finishing touch.
  • In a spacious bowl, mix cream cheese, sugar, and vanilla until smooth. Add eggs one by one, making sure to mix well after each addition. Melt the chocolate, then stir it into the cream cheese mixture. Pour the chocolate batter over the pecans.
  • Bake in a preheated oven until the filling is set, about 40 to 50 minutes. Gently loosen the edges of the cake from the pan, allowing it to cool completely without removing the rim to avoid cracking the top. Chill in the refrigerator for at least 4 hours, or overnight.
