Try our irresistible Pecan-Crusted Baked Catfish, a healthier twist for cholesterol-conscious foodies.
Ingredients:
  • 3/4 cup corn flake crumbs
  • 1/3 cup finely ground pecans
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground red pepper (cayenne)
  • 2 egg whites
  • 1 1/2 lb catfish, orange roughy, sole, or other medium-firm fish fillets (about 3/4 inch thick), cut into 6 serving pieces
Instructions:
  • Preheat the oven to 450°F. Grease a 15x10-inch pan with cooking spray. Combine cornflake crumbs, pecans, salt, paprika, garlic powder, and red pepper in a large resealable plastic bag; shake to mix thoroughly.
  • In a shallow dish, gently whisk the egg whites. Dip the fish into the egg whites, then transfer to a bag. Seal the bag and shake until the fish is evenly coated. Transfer the coated fish to a pan.
  • Bake until fish easily flakes with a fork, about 15 to 20 minutes.
