Pecan-Rum Bars

Decadent pecan pie bars, irresistibly rich and nutty.
Ingredients:
  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup dark corn syrup
  • 1 tablespoon rum or 1 teaspoon rum extract
  • 2 cups pecan halves
  • 1/2 cup powdered sugar
  • 1 tablespoon butter, softened
  • 2 teaspoons rum or 1/2 teaspoon rum extract plus 2 teaspoons water
Instructions:
  • Preheat oven to 375°F and generously grease a 13x9-inch pan with shortening or cooking spray (avoid using a dark pan).
  • In a medium bowl, use an electric mixer on low speed to beat together 1 cup of butter and 1 cup of brown sugar until creamy. Mix in flour, then evenly press the mixture into a pan.
  • Bake for 12 to 14 minutes, until edges turn golden brown and center bounces back when lightly touched.
  • In a medium bowl, combine all filling ingredients, excluding the pecans. Mix well, then fold in the pecans. Pour the filling over the crust, ensuring an even distribution of pecans.
  • Bake for 12 to 15 minutes until the filling is fully set. Allow to cool completely for about 1 hour before serving.
  • Combine icing ingredients in a small bowl, adjusting with rum or water as needed for drizzling consistency. Drizzle over bars and cut into 8 rows by 4 rows.
