Quick and impressive penne alla vodka: creamy homemade tomato-vodka sauce over tender pasta for dinner in 30 minutes!
Ingredients:
  • 1 (28 ounce) can whole peeled tomatoes (preferably San Marzano)
  • 2 tablespoons olive oil
  • 3 ounces pancetta, diced
  • 0.5 cup finely chopped onion
  • 2 cloves garlic, finely minced
  • 0.25 teaspoon crushed red pepper, or more to taste
  • 1 teaspoon kosher salt, plus more to taste
  • 3 tablespoons tomato paste
  • 0.66 cup vodka
  • 1 pound rigatoni or penne pasta
  • 1 cup heavy cream
  • 0.25 teaspoon pepper, plus more to taste
  • 0.66 cup freshly grated Parmesan cheese
  • 2 tablespoons finely chopped parsley
  • 3 tablespoons chopped fresh basil
Instructions:
  • Collect all the ingredients needed for the recipe.
  • First, bring a large pot of salted water to a boil. Then, crush the tomatoes with your hands or chop them in a food processor and set aside in a medium bowl.
  • While water heats, make the sauce: Heat oil and pancetta in a large saucepan over medium-high heat until pancetta is crisp, about 5 minutes. Add onion, cook until translucent, about 3 minutes. Stir in garlic and crushed red pepper, cook for 1 minute. Add tomato paste, cook until slightly browned, 2-3 minutes. Pour in vodka, simmer until reduced by half. Add tomatoes and juices, bring to a simmer. Cook until thickened, about 10 minutes.
  • Cook the pasta in boiling water according to package directions until al dente while the sauce reduces.
  • After the reduction of the sauce, add the heavy cream and pepper and cook for 3 minutes, stirring frequently. Then, mix in 1/3 cup of cheese, parsley, basil, and pasta until fully incorporated. Season with extra salt and pepper to taste.
  • Finish by generously scattering the rest of the cheese and extra herbs for added flavor, if desired.
