Spicy Chicken Penne alla Vodka

Budget-friendly restaurant-style spicy chicken penne alla vodka that's quick to make with pantry staples.
Ingredients:
  • 1 pound penne pasta
  • 3 chicken breasts
  • 1 teaspoon Italian seasoning, divided
  • 1/2 teaspoon salt, divided
  • 1 shallot, minced
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 (28 ounce) can tomato purée
  • 1/2 cup heavy whipping cream
  • 2 tablespoon vodka
  • 1/2 cup finely shredded Parmesan
  • 4 leaves basil
Instructions:
  • 1. Bring a large pot of lightly salted water to a rolling boil, adding penne and stirring to separate the pasta. Cook uncovered until al dente, about 11 minutes, stirring occasionally.
  • In a deep cast iron skillet over medium heat, melt butter until sizzling. Season chicken with 1/2 teaspoon Italian seasoning and 1/4 teaspoon salt, reserving the rest of the seasoning for later.
  • Place the chicken in the skillet and cook for 5 minutes on each side until no longer pink in the center and the juices run clear. Ensure the internal temperature reaches at least 165°F (74°C) using an instant-read thermometer. Transfer the cooked chicken to a cutting board to keep it warm.
  • Saute shallot and garlic in the skillet until fragrant, for about 45 seconds. Add tomato purée, the rest of the Italian seasoning, remaining salt, and red pepper flakes; simmer. Mix in whipping cream and vodka, then stir in Parmesan until melted.
  • Cut the chicken into thin strips and place them in the skillet. Drain the pasta, saving 1/2 cup of the pasta water.
  • Toss the pasta into the skillet and mix well. If the sauce is too thick, gradually add pasta water, 1 tablespoon at a time, until it reaches your desired consistency. Garnish with julienned basil and serve right away.
