Penne carbonara

Quick and easy homemade Carbonara, a famous Italian classic.
Ingredients:
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 300g lean bacon, roughly chopped
  • 300ml Cooking Cream
  • 62.50 ml fresh parsley, chopped
  • 40.00 ml fresh chives, chopped
  • 125.00 ml parmesan cheese, grated
  • Black pepper, to taste
  • 400g penne pasta, cooked and drained
  • Parmesan cheese, extra, shaved, to serve
Instructions:
  • In a large frying pan or saucepan, heat oil over medium heat. Sauté the onion and garlic for 2-3 minutes, then remove and set aside.
  • Place the pan back on the heat and crisp up the bacon on high heat, then remove any excess fat.
  • Lower the heat and mix in the cooking cream, parsley, chives, parmesan cheese, and freshly ground black pepper. Stir until everything is well combined and heated through for 2-3 minutes.
  • Coat the warm pasta with the sauce.
  • Garnish with shaved parmesan and serve while hot.
