Affordable, delicious, and speedy penne carbonara!
Ingredients:
  • 375g Penne
  • 20g Butter
  • 200g Don Middle Bacon Rashers, rind removed, thinly sliced
  • 300ml Thickened Cream
  • 2 extra-large Free Range Eggs, lightly whisked
  • 25g parmesan
  • 20.00 ml coarsely chopped chives
Instructions:
  • Boil the penne in a large saucepan until al dente according to package instructions. Remember to save 1/4 cup (60ml) of the cooking liquid before draining.
  • In a large frying pan over high heat, melt the butter. Cook the bacon until crisp, stirring occasionally for 3-4 mins. Add the cream, bring to a boil, then reduce heat to low. Simmer and stir for 2-3 minutes until the sauce slightly thickens.
  • Pour the reserved cooking liquid into the frying pan off the heat, and gently whisk in the egg and parmesan until well combined.
  • Combine the penne with the carbonara sauce, ensuring they are well mixed. To serve, garnish with a sprinkle of chives.
