Creamy penne pasta with radicchio - a quick and delicious Italian dinner ready in just 30 minutes!
Ingredients:
  • 4 cups uncooked penne pasta (14 ounces)
  • 2 tablespoons olive or vegetable oil
  • 2 tablespoons margarine or butter
  • 1 medium onion, thinly sliced
  • 1 head radicchio, cut into 1/4-inch strips
  • 1/2 cup dry white wine or vegetable broth
  • 1 cup half-and-half
  • 1/2 teaspoon pepper
  • 1/4 cup freshly grated Parmesan cheese
Instructions:
  • Prepare and cook the pasta following the instructions on the package.
  • As the pasta is boiling, heat oil and margarine in a 10-inch skillet over medium-high heat. Sauté the onion until tender, then add the radicchio and cook until tender. Pour in the wine and simmer until the liquid has evaporated.
  • Pour in the creamy half-and-half and sprinkle in some freshly ground pepper. Bring the mixture to a gentle boil, then lower the heat. Let it simmer without a cover for approximately 10 minutes, stirring often, until it thickens slightly.
  • Combine the pasta and radicchio mixture, then generously sprinkle with cheese.
