Vegetables sauteed in creamy tomato sauce mixed with pasta, topped with cheese.
Ingredients:
  • 2 cloves garlic, crushed
  • 1 (10 ounce) package fresh mushrooms, sliced
  • 1 bunch fresh asparagus, trimmed and chopped
  • 1 (14.5 ounce) can pureed tomatoes
  • salt and pepper to taste
  • 1 (16 ounce) package uncooked penne pasta
  • 1 cup heavy cream
Instructions:
  • Start by heating the fragrant olive oil in a skillet over medium heat until it shimmers. Saute the garlic until it's lightly browned and aromatic. Add the mushrooms and cook for 5 minutes. Introduce the asparagus and cook until tender, then stir in the tomatoes. Season with salt and pepper to elevate the flavors. Lower the heat, cover, and let it simmer for 20 minutes to allow the flavors to meld beautifully.
  • Bring a generously salted pot of water to a boil. Add penne pasta and cook until just al dente, about 8 to 10 minutes. Drain well.
  • Stir heavy cream into the skillet and simmer for 10 minutes until the sauce thickens. Pour over cooked pasta to serve.
