Impress guests with this elegant, easy low-carb pasta dish. Perfect for a quick, healthy meal.
Ingredients:
  • 1 cup penne pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 0.25 cup onion, chopped
  • 0.5 cup white wine
  • 0.25 teaspoon crushed red pepper flakes
  • 1 tablespoon butter
  • 10 spears asparagus, cut into 1-inch pieces
  • 18 peeled and deveined large shrimp (21 to 25 per lb)
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Prepare your mise en place.
  • First, bring a generously salted large pot of water to a boil. Add penne and cook until perfectly al dente, for about 8 to 10 minutes, then drain.
  • Heat olive oil in a large skillet over medium heat. Saute garlic and onion until the onion is soft and translucent, around 5 minutes. Add white wine and simmer for 2 minutes.
  • Add the red pepper flakes, butter, and asparagus to the pan. Sauté until the asparagus is tender, around 3 minutes.
  • Cook the shrimp with lemon juice until they turn pink and are no longer translucent in the center. Season with salt and pepper to taste.
  • Combine the cooked penne pasta with the shrimp and asparagus mixture.
  • Garnish with parsley and Parmesan cheese.
