Ingredients:
  • 300g penne rigate
  • 20.00 gm low-fat spread
  • 40.00 ml plain flour
  • 515.00 gm skim milk
  • 63.13 gm thickened light cream
  • 82.50 ml 25% reduced-fat grated cheddar cheese
  • 350g broccoli, trimmed, cut into small florets
  • 400g can no added salt pink salmon, drained, flaked
  • 250.00 ml fresh multigrain breadcrumbs
  • 1 lemon, rind finely grated
  • 20.00 ml chopped chives
Instructions:
  • Prepare the pasta in a large saucepan of boiling, salted water according to the package instructions until it's tender.
  • Grease an 8-cup baking dish. Heat spread in a large saucepan, add flour, and stir. Remove from heat. Gradually mix in milk and cream until smooth. Return to medium heat and cook for 4 minutes until smooth. Stir in cheese.
  • Place the broccoli in a microwave-safe bowl, add 2 tablespoons of cold water, cover with plastic wrap, and microwave on high for 2 1/2 minutes until vibrant green and tender. Drain any excess water before serving.
  • After draining the pasta, transfer it back to the saucepan and mix in the cheese sauce, broccoli, and salmon. Season with salt and pepper, then gently stir everything together. Finally, transfer the mixture to a baking dish.
  • 1. Preheat the grill on high to get it nice and hot. 2. Mix breadcrumbs, lemon rind, and chives in a small bowl. 3. Sprinkle the tasty crumb mixture over the pasta. 4. Grill for 2 to 3 minutes until it's golden and crispy. 5. Serve and enjoy!
