Delicious penne pasta salad with salmon, fresh veggies, and zesty lemon-dill dressing.
Ingredients:
  • 0.5 (16 ounce) package mezze (short) penne pasta
  • 1 cup sliced and quartered cucumber
  • 1 cup halved cherry tomatoes
  • 2 tablespoons minced shallot
  • 1 (2.6 ounce) pouch wild-caught pink salmon
  • 0.25 cup extra-virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon lemon-pepper seasoning
  • 0.5 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon dried dill weed
Instructions:
  • Boil a pot of salted water until it shimmers. Cook penne until al dente, about 10 minutes. Drain, rinse in cold water, and transfer to a serving bowl.
  • Layer cucumber slices, halved cherry tomatoes, and thinly sliced shallot over the pasta. Distribute flaked salmon on top for a delightful finishing touch.
  • In a small bowl, blend together olive oil, vinegar, lemon juice, lemon-pepper seasoning, mustard, salt, and dill to make the vinaigrette. Pour over the salad and delicately toss to mix.
