Grilled salmon foil packets with flavorful tomatoes, herbs, and olives make a tasty summer meal.
Ingredients:
  • 1 (10 ounce) basket cherry tomatoes, quartered
  • 4 tablespoons extra-virgin olive oil
  • 1 small shallot, finely chopped
  • 2 tablespoons black olive tapenade
  • 0.5 teaspoon salt
  • 8 basil leaves
  • 4 small fresh thyme sprigs
  • 4 (12x18-inch) pieces aluminum foil
  • 4 (7 ounce) salmon filets, with skin
Instructions:
  • Preheat your outdoor grill to high heat and brush the grate lightly with oil before covering it.
  • Mix cherry tomatoes, olive oil, shallot, tapenade, salt, basil, thyme, and pepper in a bowl until well combined.
  • Place a piece of foil shiny side-up on a work surface. Put each salmon fillet skin side-down in the center of the foil. Top each fillet with 1/4 of the tomato mixture. Fold and seal the foil edges tightly to create a packet for each fillet.
  • Reduce the grill heat, place the foil packets on the grate, and cover to cook the salmon until pale pink and flaky, about 7 to 8 minutes. Rest the parcels a few minutes before opening.
