Effortlessly create flavorful Mediterranean salmon tray bake.
Ingredients:
  • 8 baby coliban (chat) potatoes, cut into 1cm-thick slices
  • 250g cherry tomatoes
  • 9.20 gm olive oil
  • 4 x 150g skin-on salmon fillets
  • 50g (1/4 cup) kalamata olives
  • 20.00 ml drained baby capers
  • 1 lemon, rind finely grated
  • 82.50 ml small fresh basil leaves
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 200C/180C fan forced. Spread the potatoes evenly over the bottom of a large baking dish and sprinkle the cherry tomatoes on top. Drizzle with oil and bake for 15 minutes.
  • Place the salmon in the dish, skin-side down. Sprinkle with olives, capers, and lemon rind. Season generously. Bake for an additional 10 minutes.
  • Sprinkle the basil on top and serve right away with the mixed salad leaves.
