Indulgent peppercorn sauce: Crushed peppercorns cooked with butter, brandy, stock, and cream. Ideal for steaks.
Ingredients:
  • 2 to 3 tablespoons mixed peppercorns1/4 cup butter1 shallot, minced1/2 cup brandy1/2 cup beef stock1/4 cup heavy creamsalt to taste
Instructions:
  • Assemble all the ingredients.
  • Gently crush peppercorns with a mortar and pestle or a rolling pin.
  • In a saucepan over medium-high heat, melt butter until sizzling. Cook shallot until tender, approximately 3 minutes.
  • Stir in crushed peppercorns and brandy, then simmer vigorously until the brandy is nearly evaporated, about 2 to 3 minutes.
  • Pour in rich and flavorful beef stock, bringing it to a vigorous boil. Lower the heat to a gentle medium and let it simmer until it reduces in volume by half, around 3 to 4 minutes.
  • Lower the heat to medium-low, add the cream, and simmer until the sauce coats the back of a spoon or reaches your preferred thickness, about 3 to 4 minutes. Season to taste and serve hot with your favorite steak.
