Upgrade your steak with this creamy green peppercorn sauce using half and half for a modern twist.
Ingredients:
  • 1 teaspoon olive oil
  • 1 tablespoon minced shallots
  • 2 tablespoons green peppercorns in brine, drained
  • 2 tablespoons unsalted butter
  • 2 tablespoons Cognac
  • 2 teaspoons all-purpose flour
  • 1 cup beef broth
  • 0.5 cup half-and-half
  • salt to taste
Instructions:
  • In a skillet over medium heat, sauté shallots, peppercorns, and butter for 3 minutes until fragrant.
  • Pour a generous amount of fragrant Cognac into the pan and let it sizzle for a minute. Then, sprinkle in the flour and cook for another minute until the alcohol aroma dissipates. Slowly pour in the rich beef broth, turning up the heat until the sauce starts to simmer. Keep stirring and cooking for about 5 minutes until the sauce thickens to perfection.
  • Pour in the luxurious half and half, then lower the heat to a gentle simmer for 5 minutes. Sprinkle with salt to taste before serving.
