French bistro-inspired, easy yet elegant recipe.
Ingredients:
  • 55g can green peppercorns in brine, rinsed, drained
  • 60ml red wine
  • 4 x 200g beef eye-fillet steaks
  • 125ml beef stock
  • 120g creme fraiche
  • French fries, to serve
  • Rocket, to serve
  • Finely chopped flat-leaf parsley, to serve
Instructions:
  • Combine peppercorns and wine in a bowl and let marinate for 5 minutes.
  • Season the steaks generously with salt and black pepper. Heat oil in a hot frypan. Sear the steaks for 2-3 minutes on each side until cooked to your preferred doneness. Let them rest on a warm plate while preparing the peppercorn sauce.
  • Lower the heat to medium-low. Combine peppercorns and wine in the pan and simmer for 1-2 minutes until the wine reduces. Stir in consomme and creme fraiche, cook for 4-5 minutes until thickened. Season to taste.
  • Plate the steaks alongside the fries and rocket. Generously drizzle the sauce over the steaks and sprinkle with fresh parsley.
