Venison steak-frites

Try using haunch steak instead of venison fillet for a delicious and affordable frying option with great texture.
Ingredients:
  • 1 clove of garlic
  • 1 dried red chilli
  • 2 sprigs of fresh rosemary
  • ½ an orange or 1 lemon
  • olive oil
  • 2 venison haunch steaks
  • English mustard
  • cranberry sauce or redcurrant jelly
  • 500 g baking potatoes
  • 1 litre vegetable oil for deep-frying
Instructions:
  • Peel the garlic and crush it with sea salt in a mortar until creamy. Add chili, rosemary leaves, black pepper, and orange or lemon zest. Mix into a paste with olive oil. Marinate steaks in the mixture for up to 8 hours. Julienne potatoes, pat dry, and fry until golden. Grill steaks for 2-3 minutes each side for rare. Serve with mustard and cranberry sauce.
