Beef Fillets with Fettuccine and Green Peppercorn-Mustard Sauce

Wholesome beef fillets with peppercorn sauce on fettuccine - a quick and satisfying meal in just 45 minutes!
Ingredients:
  • 2 tablespoons margarine or butter
  • 4 beef tenderloin steaks (6 ounces each)
  • 4 ounces uncooked fettuccine
  • 4 ounces uncooked spinach fettuccine
  • 2 cups whipping (heavy) cream
  • 3 tablespoons Dijon mustard
  • 2 tablespoons whole green peppercorns, coarsely ground
  • 1 tablespoon whole green peppercorns
Instructions:
  • Melt 1 tablespoon of margarine in a 10-inch skillet over medium heat. Sear beef for about 14 minutes, flipping it once, until it's nicely browned. Remove beef from skillet.
  • Prepare and cook the fettuccine according to package instructions. Toss the drained fettuccine with the remaining tablespoon of margarine.
  • Combine whipping cream, mustard, ground and whole peppercorns in a skillet. Bring to a boil, then simmer uncovered for 5 to 8 minutes on medium-low heat. Stir occasionally and scrape any brown bits from the bottom until thickened.
  • Add the beef and its delicious juices back to the skillet. Cover and let it simmer over low heat for about 12 minutes until it reaches your preferred level of doneness. Place fettuccine on dinner plates and serve with the beef along with peppercorn sauce.
