Indulge in seared beef fillets paired with creamy sweet potato mash, spinach, and cannellini beans for a satisfying mid-week dinner.
Ingredients:
  • 600g beef fillet
  • 2 cloves garlic, crushed
  • Salt & freshly ground black pepper
  • 54.60 gm olive oil
  • 11.80 gm grainy mustard
  • 1 kg sweet potato, peeled and chopped
  • 20g butter
  • 1 x 400g can cannellini beans, rinsed and drained
  • 1 bunch English spinach, trimmed
Instructions:
  • Preheat your oven to 180°C. Massage the beef fillet with garlic, season generously with salt and pepper. In a skillet, heat olive oil over medium-high heat. Sear the beef fillet for 5 minutes until evenly golden brown. Transfer the beef to a baking dish, spread mustard over it, and roast for 45 minutes. Let it rest under foil for 10 minutes after removing from the oven.
  • Bring a large saucepan of water to a boil, then cook the sweet potato for 20-30 minutes or until tender. Drain and mash with butter, season with salt and pepper, and gently mix in the cannellini beans.
  • In a heatproof bowl, quickly blanch the spinach with boiling water for 30 seconds, then refresh in cold water. Serve the sliced beef fillet with sweet potato mash and spinach, and finish with a drizzle of olive oil before serving.
