Mustard and tarragon coated beef with roasted garlic aioli - the ultimate Christmas roast!
Ingredients:
  • 1 whole garlic bulb
  • 235g (1 cup) Signature Mayonnaise
  • 85g (1/3 cup) sour cream
  • 40.00 ml chopped fresh chives
  • 1.2kg-piece beef fillet, fat trimmed
  • 46.80 gm wholegrain mustard
  • 46.80 gm Dijon mustard
  • 62.50 ml chopped fresh tarragon leaves
Instructions:
  • Preheat your oven to 200°C. Encase the garlic in foil and let it roast for 30 minutes. Remove the foil and allow it to cool for 5 minutes before slicing it in half horizontally.
  • Press the garlic into a bowl and mix in the mayonnaise, sour cream, and chives. Cover with plastic wrap and refrigerate.
  • Tie the beef with unwaxed white kitchen string at 4cm intervals. Combine mustard and tarragon in a bowl and rub over the beef. Place the beef in a roasting pan and roast for 35 minutes for medium-rare or to your preferred doneness. Cover and let it rest for 10 minutes before serving.
  • Slice the beef thinly and arrange it on a platter. Enjoy with aioli.
