Create a show-stopping Christmas feast with flavorful mustard and black pepper beef paired with crispy roast potatoes and rich gravy.
Ingredients:
  • 1kg Crème Gold potatoes, peeled, halved
  • 36.40 gm olive oil
  • 1kg Beef Roast with Mustard & Black Pepper
  • 3 thyme sprigs
  • 165g pkt liquid gravy
  • 23.40 gm wholegrain mustard
Instructions:
  • Preheat the oven to 180C. Boil the potatoes in a saucepan until just tender, then drain. Coat the potatoes with half of the oil by shaking them in the pan, then transfer to a roasting pan.
  • Place the beef in the roasting pan, then drizzle with the remaining oil and sprinkle with thyme. Roast for 1 hour for a medium cook or until it reaches your desired doneness. Remove beef from the oven and transfer to a plate. Cover with foil and let it rest for 10 minutes before serving.
  • Preheat oven to 220C. Continue roasting potatoes for an additional 15 minutes or until they turn golden brown.
  • Follow the packet instructions to prepare the gravy. Stir in the mustard until well combined. Slice the beef thickly and serve with roast potatoes and gravy.
