Ingredients:
  • 60ml milk
  • 125ml (1/2 cup) cream
  • 12 garlic cloves
  • 30g unsalted butter, softened
  • 6 slices white bread
  • 4 (about 150g each) scotch fillet steaks
  • 20ml (1 tbsp) olive oil
Instructions:
  • Preheat your oven to a toasty 180°C.
  • In a saucepan, gently simmer milk, cream, and garlic for 10 minutes over low heat. Take off heat and let it cool. Strain, then whisk in eggs and season with salt and pepper.
  • Spread butter on both sides of the bread slices. Trim off the crusts and cut the bread into small squares. Press the bread into 4 non-stick muffin pans (125ml or 1/2-cup each). Pour custard over the bread and let it sit for 10 minutes. Bake the puddings in the oven for 12 minutes until they are puffed and golden.
  • Preheat a chargrill pan over high heat. Brush steaks with oil and sear for 1-2 minutes on each side. Allow the beef to rest before serving with Yorkshires and tomatoes, if desired.
