Steak with smashed minted peas

Succulent scotch fillet paired with flavorful, healthy smashed peas.
Ingredients:
  • 450g (3 cups) frozen peas
  • 9.20 gm olive oil
  • 4 x 180g beef scotch fillet steaks
  • 2 bunches asparagus, trimmed, thinly sliced
  • 1 garlic clove, finely chopped
  • 2 zucchini, peeled into ribbons
  • 82.50 ml fresh mint leaves
  • 80g feta, crumbled
  • Lemon halves, to serve
Instructions:
  • Boil peas in a saucepan according to packet instructions, then drain and coarsely mash them in the same pan.
  • Heat half of the oil in a large non-stick frying pan over medium-high heat. Season the steaks, then cook for 2-3 minutes on each side for medium doneness or until cooked to your liking. Transfer the steaks to a plate, cover, and let them rest.
  • Clean the frying pan, then heat the remaining oil over medium-high heat. Add the asparagus and garlic, stirring for 2 minutes. Now, add the zucchini and toss gently for 30 seconds until just tender. Remove the pan from the heat and add the mint, then toss everything together.
  • Plate the smashed peas evenly among serving plates. Arrange the steaks and zucchini mixture on top of the peas. Sprinkle feta over the dish, season to taste, and serve with a side of lemon.
