Spicy Parmesan herb breadsticks with lemon zest and fiber-rich bran.
Ingredients:
  • 1 cup warm water (105°F to 115°F)
  • 1 package regular active dry yeast
  • 1 tablespoon sugar
  • 1 cup Fiber One™ original bran cereal
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon coarsely ground black pepper
  • 1/4 to 1/2 teaspoon ground red pepper (cayenne)
  • 1 1/2 teaspoons grated lemon peel
  • 1 teaspoon garlic salt
  • 2 tablespoons olive oil
  • Cornmeal
  • 1 egg white, slightly beaten
Instructions:
  • Combine water, yeast, and sugar, allowing it to rest for 5 minutes. While waiting, crush cereal in a resealable bag using a rolling pin, meat mallet, or food processor.
  • Place crushed cereal, flour, cheese, black pepper, red pepper, lemon peel, and garlic salt in a food processor. Blend for 10 seconds until combined. Add oil and process for another 10 seconds. Then, add yeast mixture and pulse until dough forms a ball. Allow the dough to rest for 5 minutes. Process for an additional 10 seconds. Remove dough and let it rise for 10 minutes.
  • Preheat the oven to 325°F and prepare 2 cookie sheets with cooking spray. Divide the dough into 16 equal pieces and roll each piece into a 14-inch rope on a cornmeal-sprinkled surface. Place the ropes on the cookie sheets, brush with egg white, and sprinkle with black and red peppers for extra flavor. Allow them to stand for 15 minutes.
  • Bake until beautifully golden and crisp, for 25 to 35 minutes. Allow to cool on a rack.
