Quick and simple peppermint bark recipe with peppermint extract and crushed candy canes. Perfect festive gift for teachers, neighbors, and friends!
Ingredients:
  • 5 regular sized candy canes, or about 15 mini candy canes
  • 12 ounces white chocolate or dark chocolate (chips, wafers, or chopped up chocolate bars)
  • 1/2 teaspoon peppermint extract
Instructions:
  • Get your tray ready: Cover a cookie sheet with a silicone baking mat or wax paper and keep it to the side.
  • Smash the peppermint candy: Crush candy canes by hand into a zip-top bag, then double-bag it for extra durability. Pound the candies on a cutting board with a mallet until chunky, pea-sized pieces form. Avoid crushing them into a fine powder. Transfer the crushed candy canes to a bowl.
  • For melting the chocolate, place it in a heat-proof bowl over a saucepan of simmering water. Ensure the bowl doesn't touch the water. Stir occasionally with a heat-proof spatula until fully melted. Alternatively, microwave the chocolate in 30-second intervals, stopping when a few small lumps remain. Stir until smooth.
  • Incorporate the peppermint extract into the chocolate by gently stirring it in.
  • Spread the chocolate on the baking sheet to your desired thickness using a spatula, preferably an offset spatula for precision.
  • Decorate with candy canes: Sprinkle peppermint candy chunks over the chocolate and gently press them in.
  • Chill in the freezer until solid, about 5 minutes. Break into pieces and enjoy immediately or store in an airtight container in the fridge for up to a month.
