Peppermint Brookies: Festive fusion of brownies and cookies with a peppermint twist. Perfect dessert for Christmas gatherings.
Ingredients:
  • 1 box (17.8 oz) Betty Crocker™ Delights Supreme Triple Chunk Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • 1/2 teaspoon peppermint extract
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • Butter and egg called for on cookie mix pouch for drop cookies
  • 1/2 cup crushed peppermint candies, unwrapped (20 candies)
  • 1/3 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting (from 16-oz container)
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan), then grease the bottom of a 13x9-inch pan with shortening or cooking spray. Prepare brownie batter as instructed on the box, and mix in peppermint extract. Spread the batter evenly in the pan.
  • Prepare the cookie dough following the instructions on the package for drop cookies. Mix in 1/4 cup of crushed candies. Spoon the dough over the brownie batter.
  • Bake for 34 to 38 minutes until a toothpick inserted in the center comes out almost clean. If needed, cover with foil for the last 10 minutes to prevent overbrowning. Allow to cool completely for at least 1 1/2 hours before serving.
  • Transfer the frosting into a small resealable plastic bag, leaving the bag partially sealed. Cut a small tip from one corner of the bag and use it to pipe the frosting over the top of the bar. Sprinkle the remaining crushed candies on top. Cut the bars into 6 rows by 4 rows and store them loosely covered in a single layer at room temperature.
