Festive mint brownie cookies with Betty Crocker™ mix for a holiday hit.
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • 1/2 cup butter, melted
  • 1 egg
  • 1 tablespoon water
  • 1/2 cup peppermint crunch or creme de menthe baking chips
  • 1/2 cup semisweet chocolate chips
  • 1 pouch (7 oz) Betty Crocker™ chocolate cookie icing
  • Additional peppermint crunch or creme de menthe baking chips, if desired
Instructions:
  • Preheat oven to 350°F and prepare large cookie sheets with parchment paper.
  • Combine the brownie mix, melted butter, egg, and water in a large bowl until fully incorporated. Mix in the chips and allow the mixture to rest for 15 minutes.
  • Roll the dough into 25 (1 1/2-inch) balls, then arrange them 2 inches apart on cookie sheets and gently flatten each ball.
  • Bake for 9 to 11 minutes until edges are set and center appears slightly wet. Remove the cookies and parchment from the baking tray and cool on a rack for 5 minutes. Transfer cookies from parchment to cooling racks and let cool completely for about 30 minutes.
  • Decorate cookies by piping icing in an artistic design. While the icing is fresh, sprinkle extra baking chips for added flair. Keep cookies fresh in an airtight container.
