Peppermint-Fudge Brownies

Elevate your brownies with a festive touch by adding mint and an indulgent layer of chocolate candy on top.
Ingredients:
  • 1 1/2 cups butter, cut into pieces
  • 1 bag (10 oz) bittersweet chocolate chips
  • 1 1/4 cups sugar
  • 2 teaspoons vanilla
  • 3/4 teaspoon peppermint extract
  • 4 eggs
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1 cup whipping cream
  • 3/4 cup crushed peppermint candies (about 30 candies)
Instructions:
  • Preheat your oven to 350°F. Line a 13x9-inch pan with foil, ensuring that the foil extends over the edges of the pan; then, lightly coat the foil with cooking spray.
  • Place butter and bittersweet chocolate chips in a medium microwavable bowl. Microwave uncovered on High for 1 to 2 minutes, stirring once, until chips are soft and smooth. Whisk in sugar, vanilla, and peppermint extract. Add eggs one at a time, whisking well after each addition. Gently stir in flour, baking powder, and salt until combined. Transfer batter to the pan.
  • Bake for 28 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool completely in the pan on a cooling rack for about 1 hour.
  • Place semisweet chocolate chips and whipping cream in a medium microwavable bowl. Microwave the mixture uncovered on High for 1 to 2 minutes, stirring once, until the chips are softened and can be stirred smooth. Pour the chocolate mixture evenly over the brownies and sprinkle with peppermint candies. Refrigerate for 30 minutes or until set.
  • Gently lift the brownies from the pan using foil, then cut them into 24 equal pieces.
