Indulgent mini chocolate peppermint treats for a satisfying sweet craving.
Ingredients:
  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup white vanilla baking chips
  • 1 cup whipping cream
  • 1/2 teaspoon peppermint extract
  • 2 drops red food color
  • 2 tablespoons crushed candy canes (about 6 miniature candy canes)
Instructions:
  • Prepare 24 mini muffin cups with petit four paper cups. Melt semisweet chocolate chips in a 1-quart saucepan over low heat, stirring often. Fill each paper cup with about 2 teaspoons of chocolate. Use the back of a small measuring spoon to spread the chocolate up the sides, leaving 1/8 inch from the top. Ensure the chocolate is warm enough to spread easily. Chill in the refrigerator for about 20 minutes until fully set.
  • In a small microwavable bowl, microwave vanilla baking chips on High for 1 minute. Stir in 3 tablespoons of whipping cream and microwave for about 30 seconds more until the chips are melted. Mix in peppermint extract and food color. Allow to cool for about 5 minutes. Gently remove paper cups from chocolate cups.
  • Whip the remaining whipping cream in a medium bowl with an electric mixer until stiff peaks form. Gently fold in the melted vanilla chip mixture. Fill the chocolate cups with the whipped cream mixture using a spoon or a piping bag. Chill until ready to serve. Right before serving, sprinkle with candy for a delicious finishing touch.
