Peppermint mousse

Impress with easy peppermint mousse at your party.
Ingredients:
  • 2 x 100g blocks Lindt Excellence mint intense chocolate, chopped
  • 166.65 gm thickened cream
  • 2 eggs, separated
  • 40.00 gm caster sugar
  • After dinner mints, to serve
Instructions:
  • Put the chocolate in a microwave-safe bowl. Heat in the microwave on medium (50%) power for 2 to 3 minutes, pausing to stir with a metal spoon halfway through, until smooth. Allow to cool for 10 minutes.
  • Whip cream using an electric mixer until soft peaks form, about 2 to 3 minutes.
  • Mix in egg yolks and half of the cream with the chocolate until well combined. Gently fold in the rest of the cream. Clean and dry the beaters and bowl.
  • Beat egg whites with an electric mixer until soft peaks form, about 3 to 4 minutes. Add sugar and beat until glossy. Gently fold half of the egg white mixture into the chocolate until combined, then fold in the remaining egg white mixture.
  • Divide the mixture equally among 4 half-cup glasses. Chill in the refrigerator for 3 to 4 hours until firm. Top with after dinner mints before serving.
