Holiday butter cookies with a refreshing peppermint twist, topped with crushed candy canes.
Ingredients:
  • 3 cups confectioners' sugar
  • 1.25 cups butter, softened
  • 1 teaspoon peppermint extract
  • 1 teaspoon baking powder
  • 1 cup white sugar, or as needed
  • 1 cup finely crushed peppermint candy
  • 3 tablespoons milk
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare your baking sheets by lightly greasing them or lining them with parchment paper.
  • In a mixing bowl, cream together butter, 1 1/2 cups confectioners' sugar, peppermint extract, vanilla extract, and egg on Medium speed for 2 to 3 minutes until creamy. Switch to Low speed and slowly incorporate flour, baking powder, and salt for 1 to 2 minutes until combined. Gently fold in 1/2 cup crushed peppermint candy with a wooden spoon.
  • In a shallow bowl, coat white sugar over cookie dough balls of 3/4 inch diameter by rolling between your hands. Roll them in sugar and space 1 inch apart on baking sheets.
  • Bake in a preheated oven until golden brown, for about 10 to 12 minutes. Cool on wire racks.
  • Prepare the glaze by combining 1 1/2 cups of confectioners sugar with milk in a bowl until smooth. Drizzle the cooled cookies with the glaze, then sprinkle with the remaining crushed peppermint candy while still fresh.
