Indulge in chocolate-peppermint bark cookies - soft, chewy, and easy to make with cake mix.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • 1/3 cup vegetable or canola oil
  • 1 jar (7 to 7 1/2 oz) marshmallow creme
  • 1 cup butter or margarine, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/3 cup finely crushed peppermint candies
Instructions:
  • Preheat your oven to 350°F and prepare 2 cookie sheets lined with parchment paper.
  • Combine cake mix, oil, and eggs in a large bowl and mix with an electric mixer until a soft dough forms. Using a tablespoon, scoop the dough onto cookie sheets. Bake for 8 to 10 minutes until edges are set and slightly crispy. Let cool for 5 minutes on the sheets before transferring to cooling racks to cool completely.
  • In a large bowl, use an electric mixer to beat marshmallow creme and 1 cup of butter on medium speed until smooth. Add powdered sugar and vanilla, continue beating until smooth. Spread 2 tablespoons of frosting on half of the cookies and sandwich with the remaining cookies.
  • Coat cookie edges with crushed peppermint candies.
