Indulgent Mississippi mud cake with gooey marshmallows and rich pecan icing, embodying true Southern charm.
Ingredients:
  • 2 cups white sugar
  • 0.5 cup unsalted butter
  • 0.5 cup cocoa powder
  • 0.25 cup water
  • 0.5 cup buttermilk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 0.5 cup unsalted butter, softened
  • 6 tablespoons milk
  • 3 tablespoons cocoa powder
  • 1 (16 ounce) package confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1 (10.5 ounce) package miniature marshmallows
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9x13-inch baking pan by greasing and flouring it.
  • Combine the white sugar, flour, and salt in a large bowl.
  • In a saucepan, melt 1/2 cup butter with vegetable oil, then add 1/2 cup cocoa powder and water. Bring to a gentle boil, stirring until silky. Take off the heat and mix into the flour.
  • Combine buttermilk, eggs, vanilla extract, and baking soda in a bowl; mix into the chocolate mixture. Pour the batter into the prepared baking pan.
  • Bake in the preheated oven for about 25 minutes or until a toothpick inserted into the cake comes out clean. Allow to cool slightly before serving.
  • In a saucepan, melt 1/2 cup of butter with milk and 3 tablespoons of cocoa powder until it comes to a boil. Remove from heat and stir in confectioners' sugar and 1 teaspoon of vanilla extract. Gently mix in pecans.
  • Add a generous layer of marshmallows on top of the cake that has been allowed to cool for a bit. Drizzle the warm icing over the marshmallows. Let the cake cool completely before serving.
