Keep this essential scone recipe handy for perfection every time.
Ingredients:
  • 337.50 gm self-raising flour
  • 40.00 ml Soft Icing Mixture
  • 40g salted butter, chopped
  • 257.50 gm milk
  • 20.60 gm milk, extra
  • Raspberry jam, to serve
  • Double cream, to serve
  • Icing sugar mixture, extra, to serve
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Grease and lightly flour a 22cm round cake pan, then place it in the top half of the oven.
  • Combine flour, sugar, and salt in a bowl. Use your fingertips to blend in the butter until the mixture resembles breadcrumbs. Create a well in the center of the mixture and pour in the milk. Use a flat-bladed knife to gently mix until the dough starts to come together. Transfer the dough onto a lightly floured surface and knead gently for about 30 seconds until it is smooth.
  • Shape dough into a 2cm-thick round and cut out 12 scones using a 5cm round cutter. Place scones, just touching, in a prepared pan and brush with extra milk. Bake for 14 to 16 minutes until golden. Serve scones sandwiched with jam and cream, dusted with icing sugar.
