Fresh almond scones - perfect with butter and preserves.
Ingredients:
  • 1/3 cup butter or margarine (firm)
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup quick-cooking oats
  • 3 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons grated lemon peel
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup slivered almonds, toasted
  • 4 to 6 tablespoons half-and-half
  • Sugar, if desired
Instructions:
  • Preheat oven to 400°F.
  • Combine butter with flour, oats, 3 tablespoons of sugar, baking powder, lemon peel, and salt in a medium bowl using a pastry blender or crisscrossing 2 knives until the mixture resembles fine crumbs. Mix in 1 egg, almonds, and the perfect amount of half-and-half until the dough pulls away from the sides of the bowl.
  • Transfer the dough onto a lightly floured surface. Gently knead it 10 times. Roll or pat it to 1/2 inch thickness. Cut out rounds using a floured 2 1/2-inch cutter. Arrange them about 2 inches apart on an ungreased baking sheet. Brush the dough with beaten egg and sprinkle with sugar.
  • Bake until golden brown - about 10 to 12 minutes. Remove from the cookie sheet right away and let them cool.
