Lime curd: Sweet & tangy twist on classic lemon curd. Perfect for cakes, scones, and cookies.
Ingredients:
  • 1 cup sugar
  • 0.75 cup fresh lime juice
  • 0.25 cup butter
  • 1 tablespoon lime zest
  • 2 large eggs, beaten
Instructions:
  • Combine sugar, lime juice, butter, and lime zest in a double boiler over medium-high heat; stir until the butter is melted.
  • Blend 2 tablespoons of hot lime mixture into eggs to temper them.
  • Simmer the lime mixture over medium heat and gradually whisk in the egg mixture. Cook over a double boiler until thickened and coats the back of a wooden spoon, 20 to 25 minutes.
  • Allow to cool slightly, then transfer the mixture into a pristine glass jar. Seal with a cover and store in the refrigerator.
