Brighten tuna salad with fresh lime juice for a zesty twist.
Ingredients:
  • 1 bag (24 oz) Value Size frozen cauliflower & three cheese sauce
  • 1 box (9 oz) frozen baby sweet peas
  • 1 can (12 oz) tuna in water, drained, rinsed
  • 1 medium cucumber, peeled, chopped
  • 1/2 cup chopped green onions (8 medium)
  • 1/4 cup fresh lime juice
  • 1/4 cup light olive oil
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/3 cup sliced stuffed green olives
  • 2 plum (Roma) tomatoes, sliced
Instructions:
  • Follow cooking instructions on the bag for the frozen cauliflower and on the box for the frozen peas. Drain peas and combine with the cauliflower in a large bowl. Chill in the refrigerator.
  • Combine vinaigrette ingredients in a tightly covered container and shake until well blended. Stir in tuna, cucumber, and green onions into cauliflower mixture. Add vinaigrette and toss to coat. Refrigerate for about 1 hour until chilled.
  • Garnish with olives and tomatoes right before serving.
