Huckleberry-Lemon Scones

Delicious lemon-glazed huckleberry scone bursting with fresh summer flavors - ideal for tea time!
Ingredients:
  • 2 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 6 tablespoons butter
  • 2 tablespoons lemon juice
  • 2 eggs, beaten
  • 0.33333334326744 cup half-and-half cream
  • 0.75 teaspoon lemon zest
  • 0.75 cup fresh huckleberries
  • 1 cup powdered sugar
  • 0.25 cup lemon juice
  • 0.25 teaspoon lemon zest
Instructions:
  • Preheat your oven to 400 degrees F (205 degrees C) and generously grease a baking sheet.
  • In a large bowl, combine flour, sugar, baking powder, and salt. Use a pastry blender to mix in butter and lemon juice until evenly combined and slightly crumbly. In a small bowl, whisk together eggs and half-and-half, then add 3/4 teaspoon of lemon zest to the flour mixture. Gently mix until well blended and a dough forms. Fold in the huckleberries.
  • Take the dough and divide it in half. Shape each half into a ball on a floured surface and lightly flatten. Cut each ball into six wedges and place them on the baking sheet.
  • Bake in the preheated oven for 12 minutes until the tops are golden brown. Make a glaze by whisking together powdered sugar and lemon juice. Drizzle the glaze over cooled scones and sprinkle with the remaining lemon zest for garnish.
