Wild tart huckleberries in a sweet double-crusted pie, dusted with sugar for a golden finish - the perfect summer treat!
Ingredients:
  • 1 recipe pastry for a 9 inch double crust pie
  • 4 cups huckleberries
  • 0.75 cup white sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • 2 teaspoons white sugar
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C).
  • Place a delicious pie crust into a 9-inch pie plate, ensuring it lines the bottom and sides perfectly. Gently nestle the flavorful huckleberries into the awaiting crust.
  • In a small bowl, mix 3/4 cup of sugar and flour, then evenly sprinkle over the berries. Add lemon rind and lemon juice, and dot with butter. Cover with top crust, seal edges, and cut steam vents. Brush surface with cream, except for the crust edges, and finish by sprinkling 2 teaspoons of sugar.
  • Start by baking in the preheated oven for 15 minutes and then lower the heat to 350 degrees F (175 degrees C) and bake for an additional 20 to 25 minutes until the crust is perfectly golden brown.
