Try these irresistible huckleberry muffins, a twist on classic blueberry muffins. Perfect for using hard-to-find huckleberries or easily substitute with blueberries.
Ingredients:
  • 1 cup white sugar
  • 0.75 cup butter
  • 0.75 cup milk
  • 1.75 cups sifted all-purpose flour
  • 2.5 teaspoons baking powder
  • 1 cup huckleberries
  • 1 tablespoon all-purpose flour
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare 15 muffin cups by greasing or lining them with muffin papers.
  • In a large bowl, beat together sugar and butter until smooth. Add milk, egg, and vanilla and mix until well combined. In a separate bowl, mix 1 3/4 cups flour, baking powder, and salt; then gently fold into the batter until just combined. Toss huckleberries with 1 tablespoon flour, then gently fold them into the batter. Spoon batter into muffin cups, filling at least 2/3 full.
  • Bake in the preheated oven for 15 minutes, or until the tops spring back when lightly pressed.
