Huckleberry Muffins with Oat Bran

Chewy oat bran and sweet huckleberries make delicious baked muffins.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground ginger
  • 1 cup almond milk
  • 2 large eggs
  • 0.25 cup canola oil
  • 0.5 cup oat bran
  • 1.25 cups huckleberries
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and grease a 12-cup muffin tin.
  • In a bowl, mix together flour, sugar, baking powder, cinnamon, baking soda, ginger, and salt.
  • In a large bowl, combine almond milk, eggs, and canola oil. Use a wire whisk to blend in oat bran thoroughly. Add the flour mixture and mix until just incorporated. Gently fold in the huckleberries.
  • Fill each prepared muffin cup with batter, leaving some space at the top, about 2/3 full.
  • Bake in the preheated oven for 20 minutes until lightly golden on top. Allow to rest for 5 minutes before transferring to a platter or rack to cool.
